This is the classic, well-constructed, state-of-the-art machine made for the popcorn afficionado at home. Based closely on the design of machines used by American street vendors in the early days, this machine is built to feature a respectful antique look while looking polished and great in any kitchen or game room. The 1911 line by Paragon is designed to make the crispiest and fluffiest popcorn possible, quickly and effectively, with no excess unpopped kernels or toughness, and at the same time with an attractive display. Furthermore, they are built to withstand commercial use and durable enough for years of popcorn popping.
Being hotter than most home popcorn makers, it is recommended to use a fat or oil with a saturated and/or monosaturated structure: examples include refined lard, coconut, peanut, or soybean oil (try Wesson brand, as we’ve heard great things). The reason for this is that these won’t break down under the heat and burn, because a high “smoke point” isn’t enough. You can use as little as three tablespoons or up to 1/4 cup of oil – adjust to your liking. Canola oil will also work pretty well, but gives the popcorn a slight “fishy” taste.
This machine can pop without any oil, too! Dry-popping is about half as slow, and can dirty the kettle with carbonized bits of fluff, making clean-up a little more of a chore. If you choose dry-popping, be sure to do the occasional oil batch to keep the machine smooth and non-stick. This is the way that the original “popcorn peddlers” of the early 20th Century produced their wares, as there’s nothing better than to present lightly toasted, natural popcorn tossed with real butter (probably melted in the still-hot kettle, then dumped down over the popcorn) and just a pinch of salt. Utilizing this “authentic” method require wiping down the kettle and stirrer thoroughly, as regular butter contains milk solids, which will burn and smoke with the next batch.
